2 medium carrots, 10 to 12 beans, 6 or 7 cauliflower florets. You can add potatoes too.
1 small onion and 4 green chilis(add more or less depending on your preferred spice level)
Grind to a paste: 3 tbsp of coconut, 4 to 5 cashews and 1/4 tsp of poppy seeds
Cinnamon sticks and star anise
1 cup of coconut milk diluted with 1 cup of water
Add oil in the kadai
Add the dry spices
Add onions and green chilies
Once the onions are sautéd well, add the veggies
Once the veggies are half cooked, add half the coconut milk mixture and let it boil
Add salt as needed
Let it cook for another 10 minutes
Once the veggies are done, add the grinded paste
Once the gravy becomes little thick,switch off the stove. Do not cook for more than 5 minutes after adding the paste
Garnish with coriander leaves/cilantro
Vegetable stew is ready.
