Long beans/Pachai karamani

I took 2 bundle of long beans (as shown in the above picture) wash them and cut into 1/2 inch size. 1/2 tsp mustard seeds, 10 curry leaves, 2 dry red chilies, 1/2 tsp split Urad dal, 1 1/2 tsp pepper powder and salt to taste

Add 3 tbsp oil in the kadai

Add the mustard seeds

Add the split Urad dal, now lower down the flame to medium, we are cooking the whole recipe in the medium flame

Add the curry leaves

Finally add the dry red chilies( break it into 2 and add)

Now add the cut beans

Stir it for about 3 minutes

Then close it with a lid and cook it in a medium flame for 5 minutes

Open the lid every minute and stir in between, so that it will not burn. Until now we didn’t add any water. The beans will cook in its own moisture

Now add 1 1/2 tsp salt and stir it nicely

Again close it with the lid and cook for about 5 minutes, checking and stirring in between

The beans are half cooked now

Now add 3 tbsp of water and stir it nicely, the flame should always be in the medium

After 3 minutes, add the 1 1/2 tsp of pepper powder and again cook it for about 3 to 5 minutes. Check if the beans are done. And mix it well. The beans should be crunchy and should not turn mushy.

Now the Pachai karamani poriyal is ready!
