1 kg chicken-I used chicken leg quarters cut into medium sized pieces
1 1/2 tbsp ginger & garlic paste and 2 tsp salt
Marinate the chicken with ginger and garlic paste and salt.
8 to 10 small onions, 2 tsp pepper corns, 12 to 15 dry red chilies( you can add more depend on your spice level) 1 1/2 tsp sombu/fennel seeds and 1 1/2 tsp cumin seeds.
First grind all the dry ingredients except the onions into a fine powder
Then add the onions
Grind it to a smooth paste
Marinate the chicken with the grinded paste
Heat coconut oil in a kadai
Add the chicken pieces one by one into the oil, Do not over crowd the chicken
Fry the chicken until it turns golden color and well cooked
Once the chicken is well cooked, remove it from the oil and place it in a plate. Fry all the remaining chicken pieces as mentioned above
Finally add some bunch of curry leaves in the oil and saute that for 30 seconds and garnish it on the chicken pieces
