Baby Potato Roast- A very delicious, almost everyone’s favorite dish. Goes well with Curd rice, rasam rice or sambar rice.2

Baby Potatoes 1/2 kg
Curry Leaves 8 to 10 nos
Split Urad Dal 1/4 tsp
Fennel Seeds/Sombu 1/2 tsp
Mustard seeds 1/4 tsp
Turmeric Powder 1/4 tsp
Chili Powder 1/2 tsp( depend on your spice level)


Wash the potatoes and poke the potatoes with a fork so that the salt can get inside well while cooking4

Add required amount of water and salt and pressure cook the potatoes, I allowed 3 whistles and the potatoes were cooked perfectly5

After the pressure has gone down, allow the potatoes to cool and then peel off the skin

In a pan, add 2 tbsp oil. Once the oil is hot, add the mustard seeds, and after the mustard seeds, popped, add the split urad dal and fennel seeds and let it fry in a medium flame7

After those turned into golden color, add the turmeric powder, chili powder and curry leaves and saute for couple of seconds8

Now add the potatoes 9

Mix them gently with the help of a flat spoon and roast them in a medium flame10

Shake the pan to allow the potatoes to coat well in the oil mixture. You can check the salt and add if any required11

After 10 to 12 minutes, the potatoes will be roasted well and ready to be served.12
