Peanut Chutney- A very delicious chutney from southern part of India. This goes well with hot idlis, dosa, chapathi and we even have this chutney with medhu vadai. 

Peanuts Raw 1 Cup
Garlic Pods 5 Nos
Chili Powder 2 tsp ( depend on your spice level)
Salt As required
Tamarind A small gooseberry size

TEMPER & GRIND:

Oil 3 tbsp
Mustard Seeds 3 Tsp
Split Urad Dal 3 Tsp
Curry leaves A small bunch

Soak the tamarind in 1/2 cup of water

Heat 1 tbsp oil in a kadai

Add the garlic and saute that in a medium flame

Once the garlic turns into slight golden color, add the peanuts and saute that in a medium flame too

Once the peanuts turn into golden color as shown in the picture above

Add the chili powder

Saute that for a minute

Squeeze and extract tamarind water from the soaked tamarind and add the tamarind water to the peanuts

Cook that for a minute and switch off the flame and let it cool

Once the peanuts have cooled down, pour that in the mixer jar, add required amount of salt and water and grind it to a paste. When grinding, the peanuts consume more water

The consistency of the ground peanuts is shown in the picture above

Now we will do the tempering and then the grinding to add to the peanuts mixture. Add 2 tbsp of oil in a kadai. Once the oil heated up, add the mustard seeds. Once the mustard seeds popped, add the split urad dal. Saute that until it turns slight golden color and then add the curry leaves. And switch off the flame

Pour the tempering mixture into a mixer jar and grind it to a paste. Add the ground paste to the ground peanuts and mix it well. Spicy tasty peanut chutney is ready
