Kovakkai poriyal | Tindora Fry

Kovakkai/Tindora/Ivy Gourd is a very nutritional vegetable and well known for medicinal benefits as well for its culinary purposes. Kovakkai is often added to curries, stir fries and also used for making chutneys. This vegetable is very good for diabetic patients. This recipe is very easy to prepare and goes well with steamed rice or chapathis.

INGREDIENTS:

Kovakkai- Cut the Kovakkais lengthwise 1 Kg
Chili Powder(depend on your spice level) 1 Tbsp
Cumin Powder 1 1/2 Tsp
Turmeric Powder 1/2 tsp

FOR TEMPERING:

Mustard Seeds 1 Tsp
Split Urad Dal 1 Tsp
Dry Red Chilies 2 Nos
Curry Leaves 4 or 5 Nos

 

Add 3 tbsp oil in a kadai, Once the oil  is heated, add the mustard seeds. After the mustard seeds popped, add the split urad dal, dry red chilies and the curry leaves

Now add the cut kovakkais and start frying

Add required amount of salt and continue cooking

Now put the flame in mediium, and place a lid and continue cooking

After 2 or 3 minutes, add all the masala powders

Continue sauteing the kovakkais

Again place the lid and continue cooking, stirring in between

The masalas are well coated in the kovakkais and almost kovakkais are ready, Give another 1 or 2 minutes

Switch off the flame and nice and crispy kovakkais are readyEnjoy!
