Vegetable Kuruma | Mixed Vegetable Gravy | Vegetarian Recipe
Whenever I prepare chapathis, most of the time I prepare Vegetable Kuruma, rather than any other gravy. This one is very easy to prepare and do not require a pressure cooker also. This is very nutritional too as it contains many vegetables. We pour the kuruma on the chapathis and pack for the lunchbox. During lunch time, all the kurumas will be soaked into the chapathis well and will be very soft and very taste to eat. We like to have chapathis like this.
|Turmeric Powder||1 tsp|
|Chili Powder||2 1/2 tsp|
|Coriander Powder||2 tsp|
|Garam Masala powder||1 1/2 tsp|
|Coconut Milk||4 cups|
|Mustard Seeds||1/2 tsp|
|Curry leaves||4 or 5 nos|
|Dry Red Chilies||2 Nos broken|
3 tbsp of chopped coriander leaves
Heat oil in a kadai, add the onions. Once the onions are translucent, add the carrots and beans and stir it. Cover it and cook. Stir in intervals.
Once the carrots and beans are half cooked, add the cauliflower.
Now add the turmeric powder and stir it well
Cover and cook for another 5 to 7 minutes, stirring in intervals
Now add the remaining masala powders and mix well
Add required amount of salt and mix well
Now add the coconut milk
Continue cooking for about 5 to 7 minutes in a medium flame and then switch off the flame
Add 1 tbsp oil in a saucepan, splutter the mustard seeds, curry leaves and broken red chilies and add it to the kuruma
Garnish with coriander leaves Enjoy!
