Mutton Ghee Roast | Mutton recipes | Non Vegetarian Recipe

I was thinking of posting this recipe for quite a while and finally got the time for this posting. Mutton Ghee Roast- a very flavorful dish with all the freshly ground spices and ghee. In most of the houses, Sunday is the non veg day. Everyone will be very relaxed and enjoy their favorite non veg recipe on this day with their favorite movie for the afternoon too. Same in my house too. Sunday is Mutton day in our house.  Everyone in my house like mutton very much.  Most of the time I make mutton chukka. And finally thought of posting this recipe, as I have already posted Chicken Ghee Roast before in my post.  So I thought what if I do that with mutton, and here we go with this recipe.  This goes well steamed rice, chapathi or naan.

Mutton {Clean the mutton thoroughly) 2 kg
Ginger and Garlic paste 2 tbsp
Turmeric Powder 1 Tsp

Ghee/ Clarified Butter- 10 Tbsp

ROAST AND GRIND

Coriander Seeds 2 tbsp
Pepper Corns 2 tbsp
Fennel Seeds 2 tsp
Cumin Seeds 2 tsp
Dry red Chilies 6 nos
Kashmiri Red Chilies 8 Nos
Curry leaves 7 to 8 Nos
Ginger 2 Small pieces
Garlic 4 small pods

Dry roast all the ingredients as shown in the picture above and grind it to a fine paste

Pour 3 tbsp ghee in a pressure cooker, add the turmeric powder and ginger and garlic paste and saute that for 30 seconds

Add the mutton pieces and cook for about 4 to 5 minutes

Add 1/2 cup of water to the mutton, and pressure cook it for 8 whistles. Once the pressure is released, reserve the water from the mutton pieces separately in a bowl

Add remaining ghee to a kadai, and add the ground paste and cook that in a medium flame

Once the ground paste cooked nicely and the ghee started oozing out, pour the reserved liquid from the mutton pieces and cook until half of the the liquid got absorbed 

Add required amount of salt

Add the cooked mutton pieces and cook until everything incorporated well with the gravy

Garnish with coriander leaves
