Podi Idli- When you have left over idlis and doesn’t like to eat a day old idli, the best way to make use of those idlis without wasting is to make podi idlis. This is a great lunchbox recipe too. This will be good for packing food for travelling. My mother in law always make podi idlis when she travels. This will stay good for a day ot=r two while travelling and no need of refrigeration.
|Idli||cut into cubes- 10 Nos|
|Idli Podi||2 tbsp ( depend on your spice level)|
|Curry Leaves||5 to 8 Nos|
|Mustard Seeds||1/2 tsp|
Add 2 tbsp of Gingelly/Sesame oil ( enhance the taste) in a pan
Once the oil is hot, add the mustard seeds. After the mustard seeds popped, add the curry leaves and let it fry for 10 to 15 seconds
Now add the idli podi/powder. Saute 1 or 2 times
Add the cut idlis now
Mix well until everything incorporates well
Add required amount of salt
Finally add another tbsp of gingelly/sesame oil. Mix it
